Coconut and Lemon Panna Cotta

(A creamy, dairy-free dessert that's rich in healthy fats, calcium, and soothing for digestion.)

Ingredients:

• 1 can (400 ml) full-fat coconut milk (rich in healthy fats)

• 2 tbsp honey or maple syrup (natural sweetness)

• 2 tsp vanilla extract

• Zest of 1 lemon (for a fresh citrusy flavor)

• 2 tbsp lemon juice

• 1 tsp agar-agar powder (plant-based gelling agent, a substitute for gelatin)

• Pinch of sea salt

Instructions:

1⃣ Heat coconut milk – In a small saucepan, combine coconut milk, honey, vanilla, lemon zest, and lemon juice. Stir well and bring to a simmer over medium heat.

2⃣ Add agar-agar – Sprinkle in the agar-agar powder while whisking, then simmer for another 2-3 minutes until fully dissolved.

3⃣ Set the panna cotta – Pour the mixture into serving cups or molds and allow it to cool at room temperature for about 10 minutes. Then, place it in the fridge to set for at least 4 hours (or overnight).

4⃣ Serve – Once set, top with extra lemon zest, toasted coconut flakes, or fresh berries for a finishing touch.
