Lemon Herb Grilled Chicken with Roasted Sweet Potatoes

Ingredients:
For the Chicken:
• 4 boneless, skinless chicken breasts
• 2 tbsp olive oil
• 2 tbsp lemon juice (supports digestion and fresh flavor)
• 1 tbsp fresh rosemary, chopped (anti-inflammatory)
• 1 tsp garlic powder
• ½ tsp smoked paprika (adds depth of flavor)
• ½ tsp salt & black pepper
For the Roasted Sweet Potatoes:
• 2 medium sweet potatoes, peeled and cubed (rich in vitamin A and fiber)
• 1 tbsp olive oil
• ½ tsp cinnamon (supports blood sugar balance)
• ½ tsp cumin (boosts digestion)
• ½ tsp salt & black pepper
Instructions:
1⃣ Prepare the chicken marinade – In a small bowl, mix olive oil, lemon juice, rosemary, garlic powder, smoked paprika, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 15 minutes (or refrigerate for up to 2 hours for more flavor).
2⃣ Roast the sweet potatoes – Preheat oven to 200°C (400°F). Toss cubed sweet potatoes with olive oil, cinnamon, cumin, salt, and pepper. Spread evenly on a baking sheet.
3⃣ Grill the chicken – Heat a grill or grill pan over medium heat. Grill the chicken breasts for 6-8 minutes per side until fully cooked (internal temperature of 75°C or 165°F).
4⃣ Roast the sweet potatoes – Place sweet potatoes in the preheated oven and roast for 20-25 minutes, flipping halfway through, until tender and slightly crispy.
5⃣ Serve – Serve the grilled chicken with a side of roasted sweet potatoes and a fresh green salad or sautéed greens.
