Beef & Vegetable Stir-Fry with Ginger Soy Sauce

(Packed with protein, fiber, and anti-inflammatory ingredients to support hormone balance.)

Ingredients:

For the Stir-Fry:

• 500g (1 lb) lean beef (sirloin, flank, or tenderloin), thinly sliced

• 2 tbsp olive oil or sesame oil (for cooking)

• 1 red bell pepper, sliced

• 1 zucchini, sliced

• 1 cup broccoli florets

• 1 small onion, thinly sliced

• 2 garlic cloves, minced (supports immune health)

• 1 tsp fresh ginger, grated (anti-inflammatory)

• 2 tbsp tamari or low-sodium soy sauce

• 1 tbsp rice vinegar (adds tang)

• 1 tsp honey (natural sweetness)

• ½ tsp red pepper flakes (optional, for a spicy kick)

• Salt & pepper to taste

For Garnish:

• 2 tbsp sesame seeds

• 1 green onion, chopped (optional)

Instructions:

1⃣ Prepare the stir-fry sauce – In a small bowl, whisk together tamari or soy sauce, rice vinegar, honey, ginger, garlic, and red pepper flakes. Set aside.

2⃣ Cook the beef – Heat 1 tbsp of olive or sesame oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef and cook for 3-4 minutes until browned. Remove the beef and set aside.

3⃣ Stir-fry the vegetables – In the same pan, add another tablespoon of oil. Add the onion, bell pepper, zucchini, and broccoli, and stir-fry for about 5-7 minutes, until the vegetables are tendercrisp.

4⃣ Combine & toss – Add the cooked beef back to the pan with the vegetables. Pour the stir-fry sauce over everything and toss to coat. Cook for another 2-3 minutes until everything is well combined and heated through.

5⃣ Serve – Garnish with sesame seeds and chopped green onion before serving. You can serve this dish on its own or with brown rice or quinoa for added fiber.
