Baked Parmesan Zucchini Fries
(A crispy, low-carb snack that’s high in fiber, antioxidants, and healthy fats to support hormone

Ingredients:
• 2 medium zucchini, cut into fries (about ½-inch thick)
• 1 tbsp olive oil
• ¼ cup grated Parmesan cheese
• ¼ cup almond flour (or breadcrumbs if you prefer)
• 1 tsp garlic powder
• 1 tsp dried oregano
• ½ tsp salt
• ½ tsp black pepper
• Fresh parsley (optional, for garnish)
Instructions:
1⃣ Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
2⃣ Prepare the zucchini fries – Cut zucchini into sticks, similar to fries.
3⃣ Make the coating – In a shallow dish, mix Parmesan, almond flour, garlic powder, oregano,
salt, and pepper.
4⃣ Coat the zucchini fries – Dip each zucchini stick into olive oil, then coat evenly in the
Parmesan mixture. Arrange on the baking sheet in a single layer.
5⃣ Bake – Bake for 20-25 minutes, flipping halfway through, until the fries are golden and crispy.
6⃣ Garnish & Serve – Garnish with fresh parsley and serve warm, perhaps with a side of Greek
yogurt dip or marinara sauce.
