Almond Butter Chocolate Chip Cookies

(Protein & healthy fats)

Ingredients:

• 1 cup almond butter

• ½ cup coconut sugar or honey

• 1 egg (or flax egg: 1 tbsp flaxseed + 3 tbsp water)

• ½ cup almond flour

• ½ tsp baking soda

• ¼ tsp salt

• ⅓ cup dark chocolate chips (70% or higher)

Instructions:

1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.

2. In a bowl, mix almond butter, sugar, and egg until smooth.

3. Add almond flour, baking soda, and salt, then mix again.

4. Fold in dark chocolate chips.

5. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.

6. Bake for 10-12 minutes, then let cool before serving.
