Chia & Date Cookies

(Energy-boosting & gut-friendly)

Ingredients:

• 1 cup pitted dates (soaked in warm water for 10 minutes)

• 2 tbsp chia seeds

• ½ cup coconut flour

• ½ tsp vanilla extract

• ¼ tsp cinnamon

• ¼ cup dark chocolate chunks (optional)

Instructions:

1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.

2. Blend soaked dates into a paste.

3. Mix date paste with chia seeds, coconut flour, vanilla, and cinnamon.

4. Stir in dark chocolate chunks (if using).

5. Form small cookies and place them on the baking sheet.

6. Bake for 10-12 minutes. Let cool before serving.
